You don’t need to sand your countertops. Simply use scouring pads like SOS or Brillo to remove all the dirt, grease and wax. You can’t use any other cleaners. To remove all cleaner residues you can rinse with water and cloth at least twice. Then you need to protect the edge of your countertop using Frog tape. This is to stop bleed through on walls and cabinets. Then you can start applying the Giani granite.
